Do you think I’m a tad late? In downtown Colorado Springs, on the east side of Tejon, is a tiny/funky breakfast place called SMILEY’S. They make a breakfast dish out of half an acorn squash and it’s filled with a mixture of -I’m guessing- scrambled eggs, squash, cumin, brown rice, ?jack cheese, onions and garlic. Your pic (looks like it) makes me very homesick. I may have to try and recreate it. SMILEY’S makes pie, too:) Happy January!!
