I was at my friend David’s a few days ago. He said he had been experimenting with pickles. He bought a really large jar of dills and started by throwing whole Habaneros in the jar to spice them up a bit. The first try was a mild hint of heat that was rather unsatisfying. He went for broke and chopped up the peppers, and put them in, seeds and all. He warned me that they were getting hotter every day…and this was day 4. He could barely eat them. They were about a 6 on my tolerance scale…which is the equivalent of a 9 for for most people who do not live with a Korean cook…
I would suggest starting with a milder pepper…like a jalapeno…but if you like the heat…the Habanero was great.
